The fruit of a large, perennial bush, cardamom is harvested at intervals while about three-quarters ripe, otherwise they split open. They are dried in the sun for 3-4 days. The aroma is strong but mellow, fruity and penetrating. The taste is lemony and flowery, with a note of camphor or eucalypt due to cineole in the oil. Net weight: 1 lb.
