This artisan salt is a moist, coarse grain, naturally white sea salt from the pure seawaters of Pangasinan in the Philippines. It is hand-harvested, sustainable, eco-friendly, and artisan-produced. Harvested only four months of the year without the aid of machinery or fossil fuels, this salt represents hope for a better future for the local community and awareness to culinary enthusiasts and chefs everywhere of a nearly forgotten product. Crafting this salt is an incredibly labor-intensive process. Producing a flavorful, quality salt requires generations of experience, clean seawater and natural heat from the sun. Today fewer than 50% of salt producers remain holding the knowledge of traditional methods of production.
Wonderful bright, clean, crisp flavors powered by underlying minerals define this complex and well-balanced salt. Texture is crunchy from hollow, pyramid crystals allowing the salt to adhere on the surface of foods and pleasantly covering the palate. Use for grilling, roasting and finishing to boost all foods from sweet to savory. Fleeting on the palate, use liberally without restriction.
